Natilla Recipe

 

4 eggs separated (save the egg whites)

½ cup flour + 2 Tbsp. Flour or

½ cup cornstarch + 5 Tbsp cornstarch

1 quart milk

¾ cup sugar

1/8 tsp salt

5 tbsp. Butter or margarine

1 tsp vanilla

cinnamon or nutmeg (to sprinkle on top when finished)

1 chilled bowl

 

Make a paste of egg yolks, flour and 1 cup of the milk in a medium bowl. In a medium saucepan, add the sugar and salt to the remaining milk and scald at medium temperature. Add the egg yolk mixture to the scaled milk and continue to cook at medium temperature until it reaches the consistency of soft custard. Remove from heat and cool to room temperature adding the butter and vanilla when the mixture is still warm (stir in until the butter is melted). Beat the egg whites until stiff but not dry and fold into custard chill before serving. Sprinkle with cinnamon or nutmeg.
